Did you even know there was such a thing as national Chili day? Well there is! Everyone has their own favorite chili recipe, and I love to try out new Chili on my family. When my hubby has a good hunting season we almost always enjoy Venison chili through the winter months. It can be tough finding a great venison chili recipe so I thought I’d share mine with you.
It’s really not much different than any regular chili recipe.
Venison Chili Recipe
3 1/2 lbs venison roast cubed
3 Tbsp Oil
2 cups chopped onion
4 cloves garlic, minced
1/4 chili powder
1 1/2 tsp oregano
1 1/2 tsp cumin
1 tsp crushed red pepper
2 cups beef broth
1 large can diced tomatoes
1 can tomato paste
1 tbsp salt
1 tsp sugar
1-2 tbsp cornmeal (to thicken)
What you do:
Heat oil in a heavy pot. Ad meat and stir constantly to sear. Brown the meat pretty well for 3 or 4 minutes. Add onion and garlic and saute until translucent.
Stir in the chili powder, oregano, cumin and crushed red pepper and mix well until they are well combined.
Add beef broth, tomatoes, tomato paste, salt and sugar. Mix well.
Cover and simmer for an hour.
Uncover and simmer for another hour.
If chili is too thin add the cornmeal and stir.
