Kielbasa Recipe

In an effort to keep our grocery bill down this week I went through the freezer and made the menu based on meat we already had. For some strange reason my mom brought me a Kielbasa (I think she didn’t like it or something. I don’t know) so anyway, there was a Kielbasa in the freezer.

The only thing I really use Kielbasa in is Lentil Soup, so I set about searching for a recipe for Kielbasa.

Of course I can’t just make something as the recipe states, so here’s what I came up with.

Jackie’s Kielbasa Recipe

1 lb kielbasa (cut into slices)
1/2 green pepper, chopped
1/2 medium onion, chopped
couple shakes italian seasoning
couple shakes of red pepper flakes
1 28 oz can diced tomatoes
Linguini
1/2 c grated parmesan cheese
2 tbsp butter

Here’s what you do: (man it’s so simple!)

Saute the onion and green pepper in a little bit of olive oil.

Add the Kielbasa and let it brown a little bit.

While you’re doing that add the Italian seasoning and red pepper flakes

When your kielbasa is a little brown add the tomatoes.

Let simmer for 10 minutes or so while you cook your noodles.

When the  pasta is done, drain and return to the pot.

Add butter to the pasta and stir.

Add parm to the pasta and stir.

Serve Kielbasa mixture on top of pasta.

YUM!

Surprisingly enough everyone in the family loved this one. Even hubby! The one suggestion he made, and I absolutely agree is that it would have been fantastic with a little shrimp thrown in too! Absolutely will do that next time.

There wasn’t much pasta left so I had it over leftover rice from Chinese food for lunch. Also quite delicious!

  1. Jackie, That sounds really good. I grew up on that and all my mom did was cook it in a pan and served it with potato and vegetable.

    I have done the same, but also have a great recipe for a potato and leek soap that it goes in. I love it and is a nice comfort food when weather is cooler.

    Sounds very tasty.
    Usually I cook Kielbasa with potatoes and mixed Italian seasoning for my husband. I love this dish because I like Italian cuisine. Spicy chili powder may increase the aroma and delicacy of this dish.
